I had the beef tripe tacos, and they were excellent – the texture was on point, and the seasoning was just right. Top it off with their homemade salsa, and it was a taco lover's dream! " I stumbled upon El Queretano while searching for some authentic tacos in Santa Fe. The moment I stepped up to the food truck, I was greeted with an infectious smile from the owners. I ordered the beef tongue taco, and it was absolutely incredible. The meat was tender, seasoned perfectly, and the tortillas were fresh. The portion size was generous; I hardly had room for the side of Spanish rice, which was delicious too! I sat in the little shaded area next to the truck and enjoyed every bite.
