I had the beef tripe tacos, and they were excellent – the texture was on point, and the seasoning was just right. Top it off with their homemade salsa, and it was a taco lover's dream! The owners run the place with passion and it shows. I genuinely appreciated the hospitality during my visit. The only hiccup was finding parking, but it’s totally worth it once you do. " I stumbled upon El Queretano while searching for some authentic tacos in Santa Fe. The moment I stepped up to the food truck, I was greeted with an infectious smile from the owners. I ordered the beef tongue taco, and it was absolutely incredible. The meat was tender, seasoned perfectly, and the tortillas were fresh.
